Salmon Slow Cooker Recipe – it’s as easy as it looks

I got this dinner recipe from my friend Jen on Instagram and I seriously felt like she left out about 10 steps and 12 ingredients when telling me how to make this. One of those – sounds too easy to taste good kind of recipes…

It is beyond one of the easiest meals EVER and so delicious. Since it’s made in the crockpot (or slow cooker), it’s simple by definition.

As always, I did a few modifications:

1 small bag baby spinach

1-2lbs salmon filets

1 lemon sliced

1/4 cup chicken broth

Salt & Pepper to taste

Seriously – those are the only ingredients. Originally it said to use “dill to taste,” but I don’t bother with that.

Directions: Simply fill the slow cooker with spinach leaves. Top with salmon filets and sprinkle with salt and pepper to taste. Top with lemon slices and pour chicken broth over the top. Cover and cook on low for 2 hours. Salmon should flake and be fully cooked.

Boom, dinner is served. I will say one thing about this recipe – a lot of the spinach leaves (at the bottom) sort of melted or disintegrated, which left a great taste to add to the salmon, but felt that I didn’t have much of a side.
