Salmon Slow Cooker Recipe – it’s as easy as it looks
I got this dinner recipe from my friend Jen on Instagram and I seriously felt like she left out about 10 steps and 12 ingredients when telling me how to make this. One of those – sounds too easy to taste good kind of recipes…
It is beyond one of the easiest meals EVER and so delicious. Since it’s made in the crockpot (or slow cooker), it’s simple by definition.
As always, I did a few modifications:
1 small bag baby spinach
1-2lbs salmon filets
1 lemon sliced
1/4 cup chicken broth
Salt & Pepper to taste
Seriously – those are the only ingredients. Originally it said to use “dill to taste,” but I don’t bother with that.
Directions: Simply fill the slow cooker with spinach leaves. Top with salmon filets and sprinkle with salt and pepper to taste. Top with lemon slices and pour chicken broth over the top. Cover and cook on low for 2 hours. Salmon should flake and be fully cooked.
Boom, dinner is served. I will say one thing about this recipe – a lot of the spinach leaves (at the bottom) sort of melted or disintegrated, which left a great taste to add to the salmon, but felt that I didn’t have much of a side.
NutriBullet: Making The Blonde Side look like housewifey material
Mark this the first time I’ve ever been photographed and looked like a housewife. Perhaps it’s because I am starting to live a more mature and responsible lifestyle (most of the time anyways), especially when it comes to health and wellness.
The year 2016 marked a “must learn to cook” effort for me and overall desire to lead a healthier lifestyle – simply being more aware of what I’m eating, ways to cut down on calories or just staying healthy. With all that, I’ve become obsessed with my NutriBullet, and for many good reasons.
For starters, just like you, I lead a busy life. I don’t always have time to sit down with a fork and chomp on a fresh green salad – most of the time I don’t have time to even sit down at all. So the convenience of the NutriBullet and being able to whip up a delicious smoothie has been crucial to keeping me fueled and staying on track.
Secondly, I’m not trying to be negative or pessimistic, but I don’t think I’ll ever be much of a genius in the kitchen. There’s something exciting about throwing a bunch of random ingredients into my NutriBullet and seeing what I end up with. I won’t lie – it’s not always successful – something about an orange juice + peanut butter combination that did not please my palette.
Whether or not you actually own a NutriBullet, I’m just as obsessed with NutriLiving – the affiliated
Health & Wellness calls for intense concentration (and reading skills?)
website filled with recipes, tips on health and wellness and other goodness. It’s such a huge and well-laid out resource (and free!).
For instance, the other day I noticed I had a huge bag of chia seeds leftover – from what, I have no idea. But aside from actually purchasing them, I didn’t know why chia seeds were so good for you or recipes I could add them to so they didn’t go to waste, so I simply typed in “chia seeds” in the search bar and came back with a ton of useful information and amazing recipes. The site is even so detailed, there is an easy to find tab titled “Infographics,” which had four unique infographics on chia seeds.
Needless to say, I probably know more about chia seeds than anyone you know (like the tip of soaking them in water to create a gel that can replace eggs in some recipes).
Probably my favorite food/flavor combo ever in life has been banana + peanut butter, so I’m always playing around with new recipes including both of those.

The whole thing took 20 minutes to make and I could easily pronounce each of the ingredients, not to mention, knew where to find them in the grocery store. I didn’t use cumin (I have never tasted this, and don’t feel the need to) and I can’t stand cilantro – everything other than that was super easy and the recipe was simple to follow.
I will say it felt touch-and-go briefly because I didn’t use a large enough skillet and I probably didn’t drain the tomatoes and beans well, like they specified, but it turned out tasty and it is pretty healthy!
Here is the recipe straight from Oxygen Mag’s website:
Hands-on time: 15 minutes | Total time: 20 minutes
To optimize the meatballs’ flavor, create a caramelized crust by first searing them in the skillet until golden brown on all sides.
Ingredients
1 lb. extra-lean ground turkey breast
2 large egg whites
¼ cup whole-wheat bread crumbs
¼ tsp. sea salt
¼ tsp. fresh ground black pepper
2 tsp. olive oil
1 cup frozen corn
1 15-oz. can low-sodium black beans, drained and rinsed well
2 cups diced vine-ripened tomatoes
½ cup low-sodium chicken broth
1 Tbsp. fresh lime juice
1 tsp. ground cumin
¼ cup chopped fresh cilantro
Directions
1. In a large bowl, combine turkey, egg whites, bread crumbs, salt and pepper and mix well.
2. Shape into 16 meatballs, each about the size of a golf ball.
3. In a large skillet, heat oil over medium-high heat. Add meatballs and sear 3–5 minutes, turning frequently, until browned on all sides.
4. Add corn, beans, tomatoes, broth, lime juice and cumin and mix well. Reduce heat to medium, partially cover and cook 3–5 minutes until meatballs are cooked through.
5. Stir in cilantro and serve.
Nutrients per serving (4 meatballs and 1 cup bean-corn mixture): Calories: 320, Total Fat: 4.5 g, Saturated Fat: 0 g, Cholesterol: 55 mg, Sodium: 340 mg, Total Carbohydrates: 32 g, Dietary Fiber: 7 g, Sugars: 5 g, Protein: 37 g

Belize is an amazingly gorgeous place and super easy to escape to from Houston.
Yes, I said escape, because that’s what a beautiful island like Belize can do for you – make you feel like you can escape real life while simultaneously focus on fixing or resetting what it is you need to.
I met some amazing girlfriends, some of which I consider my closest friends. We may not have hung out since our trip, but they hold a special place in my heart and have shared some of life’s toughest and most glorious journeys.
Spending “girl’s only” time is seriously badass. You learn so much about yourself through such an experience.
You learn to love (or respect) alone time. This trip showed me that alone time shouldn’t be scary or looked down upon – it’s an amazing and limited experience for all of us.
Women aren’t nearly as judgmental as you think. Maybe it was the setting provided by the island and Reset Retreat, but it was such an honest and trustworthy space.
WE ALL NEED TO HIT THE RESET BUTTON. Your life, emotions, physical ability, mental capacity, heart and much more are just like a computer – IT NEEDS TO BE TURNED OFF EVERY ONCE IN A WHILE.

Entrepreneur Excitement Blog Series #7 – cuteheads.com with Esther Freedman
We all have those friends or people we know around town – the ones who seem to get more done in one little day than you can manage to get done in two weeks and look amazing and upbeat while doing all of it. Right? The person who rings true for that description is one of the ultimate Girl Bosses in Houston, Esther Freedman. Even though we’re probably the same age or at least very close to it, I can truly say I want to be like Esther when I grow up. This lady has it all together.

EF: My job, even on its hardest day, is still something I love and am passionate about 4 years in. As a designer of kidswear, I’m constantly creating, looking for inspiration and getting to work with other business owners I like and admire. I also love children, so getting to work with kids on fun photoshoots is a definite plus.
TBS: Think back – how did we met?
EF: That’s a great question… I’m not sure exactly how we met or how long ago, but it’s certainly been at least 5 or 6 years. I think we became friends during Twitter’s heyday back when people still hung out there and it wasn’t just a bunch of bots and scheduled tweets talking to each other.
TBS: Have you partnered with The Blonde Side on any projects before?
EF: I don’t think we’ve ever actually partnered before, but we’ve certainly promoted each other and helped each other spread the word about whatever we were working on!
TBS: Describe your personal style.
EF: I’d describe my personal style as mom chic (ha). Seriously, I dress for comfort, but cute comfort. I love boyfriend jeans, well-made tees, cute leggings and I have quite a collection of sneakers. I have a kind of uniform I wear every day, which makes it easy to get dressed in the morning. I have a 2 year old and just had another baby, so I need things I can easily and comfortably wear while still looking good in case I need to pop into a meeting.
TBS: What does supporting not only local Houston folks mean to you, but specifically

other women?
EF: This is a major passion for me and something I feel is much talked about and not practiced. I know it’s easy to buy everything at Target, but I make it a point to shop small as much as I can. I promote other business owners not only through social media but through dollars. I write a weekly series about girlbosses and I’ve had so much fun highlighting and promoting these deserving women. And as for shopping local, there are so many incredible small businesses in this town. Houston has been so giving and generous to me and my business, it’s only right that I do the same for others.
TBS: You run your own business (which is the point of this series!) – what was the final straw to say “I can do this on my own?”
EF: Truthfully, I was at a very stressful but awesome job and knew I wanted to start a family soon after getting married. I didn’t feel I could be the kind of mom I wanted to be while working full time at an office because I wanted to have the flexibility of not working if I needed to, and the stress level and intensity plus having kids wouldn’t have been a good situation for me. So I started my business right before I got married and got it off the ground during our first year of marriage.
TBS: What’s your driving force behind running your business? I know firsthand it’s hard as balls, but what keeps you going?
EF: I’d say the #1 thing that keeps me going is good habits. That might seem simplistic, but in all honesty, if you don’t have the discipline to make yourself do the work you don’t want to do, or solve the problems that need to be solved, you’re not going to make it. I’d also say really loving what you do versus just thinking it sounds cool/romantic/lucrative is the other factor. My business is my baby. If you don’t legitimately enjoy and love the process, you’ll never make it for the long haul.
TBS: Best advice you’ve ever been given but ignored?
EF: “You? Make kids clothes? Maybe you should do something else.”
TBS: If there was a reality show about you, what channel would it be on?
EF: Probably CNBC or some boring chanel like that, and it would be all about my business. As much as I love social media, I’m a pretty private person and don’t like to share a lot of personal stuff with the world. I’m definitely not Bravo material.
TBS: Favorite sports teams?
EF: Texans and Rockets!
TBS: Magazine, website or author you can’t put down?
EF: I read Slate and The Daily Beast every day. Other than that, I’m into a lot of different things and can’t say I have too many faves.

TBS: Look in your bag right now (purse or computer bag) – what’s the most random thing in there?
EF: There’s this little collapsible snowman that my toddler loves; I keep it in there for when she’s being extra cranky and needs to be distracted from her bad mood.
TBS: Most embarrassing/random thing in your Google search history?
EF: Some pretty terrible headshots back from when I worked in marketing. I mean, come on.
TBS: Favorite part of your job?
EF: The flexibility. I love that I can take a nap if I need to, which I do right now, since I’m having a baby in like 5 days.
TBS: Moment you are most proud of?
EF: I’ve been featured in lots of cool publications and on TV, but one of my proudest moments was being out with my daughter and seeing a random child I didn’t know wearing my clothing. It was very gratifying.
TBS: You have two plane tickets for anywhere in the world: where are you going and who are you taking?
EF: I’m going to Australia and New Zealand for like two weeks with my husband, no kids. And we’re staying in all kinds of ridiculous, amazing hotels.
TBS: Fill in the blank: I wish more people in this world would drive like their moms/sisters/children were in the cars they’re recklessly speeding and texting around.

EF: I love game days, especially going to Texans games! We’re season ticket holders, so we definitely go a lot. Other than that, I don’t care much about the other teams and definitely have no interest in fantasy football other than my husband’s team. I always root for him. My perfect Sunday probably involves a really good brunch on a cute patio and a nap.

When you’re committed to running or training for a race, the rain (and other outdoor elements like snow – something we aren’t used to here in Texas) can be a nuisance and easy deterrence.
Um, it’s rainy. I can skip today. Who’s said that before? [Raises hand.]
My solution? Find a good Pandora station to jam to (mine is still Lionel Richie believe it or not), get some great scenery (like this great art wall in EADO), and just take off.
Running has quite a few crazy misconceptions. Like you have to belong to a gym. You have to have a running partner. You have to be a “good runner.” (By the way, how do you define what a good runner is and who came up with that definition?) You have to have the best and brand new shoes on the market. You have to know exactly where you’re going.
All BS. And here’s why: I don’t currently belong to a gym. I don’t always have a running partner (although it’s nice). I am definitely not a “good runner” but I try my hardest, which is really the key. I do have some of the best and brand new shoes on the market (thanks New Balance), but sometimes I forget to pack them and just grab the oldest/dirtiest pair lying around in my car.
A few of my personal tips to get going or keep going:
Keep the gear with you. I always keep running shoes and clothes with me. Whether in the car or packing when I am traveling, even for just a short time. I guarantee the one time you’ll want to run is the one time you won’t have your gear.
Make it social. Even if it’s just a brisk walk, invite a friend (or a different one each week) for a walk to chat and catch up. Or join a running club – there are tons of them in every city and many of them even enjoy a pint of cold beer afterwards!
Try to make it a habit. I’m not saying run 10 miles everyday, but if you can get yourself to run at the same spot and around the same time each day, you’ll notice a routine, like passing many of the same runners each day. It’s almost a level of accountability.
Feel like a runner. I typically run farther and take my running more seriously when I look the part. If I’m decked out in some fancy running clothes and shoes and people pass by me, I want to look the part and not like a phony!
Set a goal that works for you. For me, I tend to feel more “accomplished” when I run a long distance without stopping, which is usually my goal in running half marathons. For others, it’s how fast they can run a mile or a certain distance. For others, it’s how many days a week they lace up and for some, it’s doing it for a particular amount of time.
Use the Nike Training Club app. I love being able to track my times and distances and it even asks you to pick an emoji that sums up your workout for the day (mine usually equals meh). Some people like Map My Run or other running/fitness apps.
Sign up for a race. Preferably one that’s for a good cause. Plus: see link below if you’re in Houston!

We had 30 Houston women join us for a fun sweat-sesh in River Oaks – some first-time riders (who did amazing!), some veteran riders, and even a friend WHO JUST HAD A BABY FOUR WEEKS AGO (I won’t mention your name Brittney).

(Let me get this out of the way – if you’ve read The Blonde Side for any length of time, you know the Florida State part of me has a hard time rooting for anything Florida Gator-related, but this is different. I’ve always admired Tim Tebow for his faith and his persistence to play the game, but Gator or not, I am officially a Tim Tebow fan after being blessed to be part of such an amazing evening.)
The Tim Tebow Foundation is “committed to celebrating people with special needs.” You know my favorite part about that mission statement? They are committed to celebrating these amazing people. Not just helping, not just raising money, not just making people aware of what special needs are, but celebrating them.

My date/buddy was Eric and he was amazing (he is a dancing king – he even takes lessons!). Eric’s mom told me his favorite show is Good Morning America.
As we got out of the limo (some were riding in one for the first time ever!) and walked down the red carpet with lights and cameras flashing, Eric high-fived everyone and kept saying “Good Morning America” is here with the biggest and most genuine smile I’ve ever seen.
I can say with 100% certainty that Eric made my night more memorable than I did his, and sometimes, that’s what volunteering and celebrating others can do for you.

Pro Football Hall of Famer Bruce Matthews Crowning Kings and Queens of the Prom
loved that Pro Football Hall of Famer Bruce Matthews was in attendance. It wasn’t just the fact that he was there for the event and having a blast himself, he had the honor of crowning each and every guest King or Queen of the Prom. (Do you have goosebumps yet? If you have a heart you do…)
According to the foundation’s website, “Night to Shine is an unforgettable prom night experience, centered on God’s love, for people with special needs ages 16 and older. On one night, February 12, 2016, more than 200 host churches in 48 states and 8 countries will host Night to Shine. That’s more than 70,000 volunteers and 30,000 honored guests sharing the same amazing prom experience on the same night around the world.”

The perfect Valentine’s Day (or anti) t-shirt // WILDFOX
Before I tell you about a brand I love (or actually stalk on social media), I always like to give credit where I first found them. One of my favorite brands for comfortable sweaters and graphically stated awesomeness on baggy t-shirts is WILDFOX, which I first saw at Nordstrom, and then see all the time from one of my fave Instagram’mers The Salty Blonde.
Sometimes when you don’t feel like talking (yes, even happens to me), a perfectly blunt graphic t-shirt will do the trick, and that’s what WILDFOX does for me. Besides making me feel like a badass.
